Baking in the Kitchen: Whole Orange Cupcakes
Here are Jag Kitchens, we are big fans of recipes that utilise whole ingredients and leave little waste behind. When we came across these delicious cupcakes from Love Food Hate Waste, we just had to share them to try for yourselves!
Using the whole orange (yes, that’s right – the whole thing!) means the cupcakes are deliciously moist and zesty, as well as being packed full of plenty of essential vitamins. Perfect for the kids lunchbox or for a snack at home.
Yield: Approx 18, depending on the tins you use
Prep time: 15 mins
Cooking time: 15 mins for standard cupcake size
Top Tip: These can be frozen!
Ingredients
1 Large orange – washed and cut into chunks (remove any pips if needed)
4 eggs
1/3 C oil
3/4 C sugar
2 C flour
3 tsp baking powder
pinch salt
Method
- Firstly, turn your oven on and set to 180C bake or 160C fan bake.
- Prepare your cupcake tin by greasing it with butter or oil – or alternatively use cupcake cases.
- Place orange, eggs, oil, and sugar in a food processor or blender and blend until smooth.
- Once blended place to the side. Sift the flour, baking powder and salt into a separate bowl. Combine these together and then make a well / hole in the middle of the flour.
- Pour the wet ingredients from the blender into the well/hole and then carefully mix together until just combined.
- Place spoonfuls of the mixture into the cupcake tin or cases, filling about 3/4 of the way up.
- Bake for 15 minutes or until lightly golden. A skewer comes out clean when inserted in the middle when they are cooked through.
- Serve as is – or with your favourite icing, dollop of cream or yoghurt on the side!
